Would you consider implementing Smartypants (Daring Fireball Projects: SmartyPants), or, at the very least, make the option available under the “Edit” menu, as it is present on the OS native apps (under “Substitutions”)? TIA.
I wanted to add that substitutions is working on the iOS app, but not under macOS. I believe this could be a small bug.
