Is any kind of subfolder supported besides "pages"?

Can I create pages in any other folder other than pages? Any kind of folder structure that is supported or recommended?

Yes, though you have to manually move files into the folder.

I tried creating a folder next to pages/journal and creating a file there - it never appeared in the search or in the “all pages” view.

I just tried again and no luck. is there anything else I can try?

EDIT: oh it appeared after a bit, not sure what happened to cause it to appear, I tried refreshing and going between pages and closing the app - but after few tries it did appear in the search
