Organizing notes when inserting images got a lot easier with resizing option. Now having the option to insert captions below them would be fantastic!

That can be done already with shift+enter after the image, or making bullets bellow
What id like would be some sort of caption that appears over the image- a semi-transparent black box with the caption written appearing over the image at the bottom (always on or on hover)
Totally agree. Actually, when you hover the image, you see the alt text but I think it should be always visible.
Alt text (or optional title) should be displayed as a caption, IMHO.
