On opening a page backlinks are displayed as open/unfolded. I would like the default to be that they appear closed/folded.

Yes … around row 225 in the config.edn (Go to settings and hit the button) you can set the number of linked references before it is shown collapsed.
:ref/linked-references-collapsed-threshold 5
You can also look at
:ref/default-open-blocks-level 1
That will define the level depth that will be shown in the linked-references.
