I’d like to be able to defer tasks by setting a scheduled date and time. I want to defer by time. So if I have a task scheduled for Mon at 3pm I don’t want to see it until Mon 3pm. From what I’ve seen in Discord this isn’t possible atm?

If you create a file called journals/2021_04_25.md (which would be next monday), and add the todo directly to that file, logseq wont overwrite that file on March 25th, so you can add events to it in advance. It doesn’t give you control over the time of day you see it, but you wont see it until that day.
Kinda hacky but it’s worked pretty well for me so far.
