Will there be a version history for each node in the DB version similar to a Google docs document? Is this already available or is there a plugin already for this in the current non-DB version?

You could use the git plugin, and commit each version of changes that you want to store.

edit: ah, I misunderstood the question. sorry.

AFAIK there are no plugins in the DB version (yet). Plus, Git relies on files to track changes, you would need to export to markdown regularly and manually commit the changes.
