I can’t change language preferences of my spellchecker on my windows PC.
I tried to change the preference file in %appdata% but everytime I open Logseq, It goes back to italian only.

I experienced same issue. In my case, it worked fine after turning spell check off and back on.
Having the same issue here. Every time logseq is restarted, Preferences is either set to no checking or to en-US.
I tried toggling spellchecking but that did not help.
Very frustrating.

Here are two feature requests about spellcheck.

Spellcheck dictionary is important. I can select the misspelled words and choose “add to dictionary” in Logseq when enabling Spell checker. But how can I undo “add to dictionary” or make the words misspelled again? So, it’s good to have a custom user spellcheck dictionary like Obsidian’s.
By the way, there is no spell checker in Logseq for Android. Please add it.
Support for spellcheck languages is also important. For example, we can choose American English or British English.
Here is a scree…
It’s possible to add another language for spellcheck by editing
C:\Users\UsErNaMe\AppData\Roaming\Logseq\Preferences (Windows example)
If you do this both English and German are spell checked, even if it’s written on the same page.
Example, added German:
"spellcheck":{"dictionaries":["en-GB","de"]

To make Logseq more accessible and beginner friendly for everyone it would be nice to have a settings option that lets you define which languages should be spell checked.
